4-ingredient Apple Pie Pancakes (vegan, gluten free)

Apple Pie Pancakes for dinner because I'm an adult and I make the rules around here. These pancakes are quick to whip up and only require 4 ingredients! To make things even better, they are vegan, gluten free, and sugar free as well.

Over time, I've simplified a lot of my cooking methods. I don't know if you can tell by my recipes lately, but as things have gotten busier, I've learned to really cut time by having my food involve less ingredients, measurements, etc. Realism, yeah! So these pancakes only need FOUR ingredients. Can't really get much better than that while still creating a fluffy, delicious pancake stack.

I chose to top my vegan apple pie pancakes with banana slices, a strawberry coconut sauce (strawberries warmed and mashed with coconut stevia), a banana coconut Too Sum bar, and a healthy chocolate drizzle. Goshh this makes me happy, all cuddled up in a cozy blanket. Like every other person in the world right now, I'm obsessed with fall flavors and seasonal foods. I've made apple pie pancakes, pumpkin pancakes, banana bread pancakes.... What flavor pancakes should I make next?!

4-ingredient Apple Pie Pancakes

Serves: 1

  • 1/2 cup buckwheat flour

  • 1/2 cup almond milk

  • 3/4 tsp baking powder

  • 1/2 tsp apple pie spice

  • 1/2 tsp vanilla extract (Optional)

  • 1 stevia packet (Optional)

In a bowl, mix the dry ingredients first (buckwheat flour, baking powder, apple pie spice, and stevia). While stirring, slowly pour in the almond milk until a thick pancake consistency is reached. Then mix in the vanilla extract. Cook over a medium heat in a large pan sprayed with nonstick spray. These fluff up a ton!! After they've fluffed up from cooking on one side for 3-4 minutes, flip and cook another 1-2 minutes to brown the other side. Best served with maple syrup or a healthy chocolate sauce as shown!! To make the chocolate sauce, I mix unsweetened cocoa powder, stevia, and almond milk until the right consistency is reached. I don't measure the liquid but generally for every tablespoon of cocoa, I add 1 stevia packet for the right sweetness.
