Baked Dijon Chicken Tenders

Mustard is a flavor I hated as a child but somehow in the past year or so I've learned to love it. There's so many kinds you can buy! In my fridge I've got regular yellow mustard, spicy brown mustard, dijon mustard, fig mustard (yeah O_O it's amazing), and stoneground mustard. Recently I've been baking my chicken in a dijon mustard sauce. I change the exact mixture each time, but this one has been my favorite enough to make multiple times!photo (62)Baked Dijon Chicken TendersServes: 3-4

  • 3 TBSP dijon mustard
  • 1 TBSP apple cider vinegar
  • 1.5 tsp dried basil
  • 1 tsp chili powder
  • 1/2 tsp black pepper
  • 1 lb raw chicken tenders

Preheat the oven to 350F. Mix all of the ingredients in a small bowl and then rub the chicken on both sides with about 3/4 of the sauce. Place the chicken on a baking sheet coated in a non-stick spray or olive oil. Bake at 350F for 30 minutes, flipping half-way through. Thanks to the idea from therungrychef, I like to slice mine in half, stuff it with avocado, and bake for another 5-7 minutes. I DEFINITELY suggest trying this! Top with the rest of the mustard sauce before serving. In the picture, I also topped the chicken with low fat feta cheese. Enjoy!
