Banana Split Sweet Breakfast Pizza

I think I may have too much fun making sweet breakfast pizzas. This was one of the most majestic yet - banana split style! "Pizza" base (that's code for 'lazy girl's giant protein pancake') topped with a strawberry milkshake protein icing, sliced banana, sliced cherries, crushed nuts, a chocolate brownie coconut butter drizzle (sweet spreads brand), and (my last bit of D;) chocolate halo top creamery healthy ice cream.   • 2 egg whites
  • 2 TBSP whey protein
  • 1 TBSP coconut flour
  • 1 TBSP water
  • 1/2 tsp baking powder
  • 1 stevia packet

Strawberry Milkshake Icing

  • 1/3 cup plain greek yogurt
  • 1 TBSP strawberry milkshake cellucor whey protein
  • 1 stevia packet

Toppings

  • 1/3 banana, sliced
  • 2-3 strawberries
  • 1 TBSP crushed nuts
  • 1 TBSP chocolate brownie coconut butter (Sweet Spreads brand)
  • 1/4 cup chocolate halo top creamery ice cream (it’s low calorie, high protein, low sugar!)

Blend all of the pizza base ingredients – I use a magic bullet for convenience. Spray a large pan with nonstick spray and pour your batter in; it will be somewhat thin. Let cook on a medium heat for 2-3 minutes until the edges begin to pull from the sides, flip, then cook another 2 minutes until the batter in fully cooked. Remove and let cool.While the pizza base is cooling, mix all of your icing ingredients. Spread this evenly on top of your pizza base. Slice the fruit, and place on top of the pizza. Then sprinkle on the nuts, drizzle the nut butter, and top with your healthy ice cream.
