This salad dish has a chip on one corner and I always feel so bad for it I'm sorry I didn't mean to hurt you bb, forgive me. Yummy flavor explosions going on in this Beet Apple Salad!! Soo good except I think it tried to get revenge on me bc I choked on that spinach stem you see right there yeah that one. Dang salad bowl, I see you.

Beet Apple Salad

Serves: 1

  • 2 cups spinach

  • 1 cup shredded lettuce

  • 1 medium apple, diced

  • 1/2 cup chopped yellow squash

  • 3 oz steamed beets, sliced

  • 2 TBSP goji berries

  • 1 TBSP pine nuts

  • balsamic vinegar

Basically, just dice & chop all of your ingredients, toss in a salad bowl, and apply as much balsamic vinegar as you want! Easy peasyyyy.
