Berries and Cream Protein Oats

This recipe is a higher protein, lower carb bowl of oatmeal; the whipped egg white and protein powder in it fluffs up and adds volume to just a 1/4 cup oats! I felt like the oatmeal never ended and it was SOOO creamy!! I can't get over it.IMG_3588Berries and Cream Protein OatsServes: 1

  • 1/4 cup raw old fashioned rolled oats
  • 1/2 cup unsweetened almond milk
  • 3/4 cup frozen mixed berries (I used blueberries, strawberries, and blackberries)
  • 1 tsp vanilla extract
  • 1 stevia packet
  • 1 egg white
  • 1/4 cup plain Greek yogurt
  • 1/2 scoop vanilla whey protein

In a bowl, mix the oats, almond milk, frozen mixed berries, vanilla extract, and stevia packet. Microwave for 3:30-4:00 minutes. Then vigorously whisk in the egg white. Microwave another 30 seconds to fully cook the egg white. Place in the freezer for 5-10 minutes to cool. When it's not extremely hot, swirl in the plain Greek yogurt and vanilla whey protein. Then eat!I put my oats into a baked kabocha squash. Then I topped it with a butterscotch protein drizzle (2 TBSP plain Greek yogurt, 1 TBSP vanilla whey protein, 1 tsp unsweetened almond milk, 8-10 stevia drops, and 1/4 tsp butterscotch extract), half frozen raspberries, and raw cacao nibs.
