Birthday Cake Batter French Toast Cups

  • 2 egg whites
  • 2 TBSP unsweetened almond milk
  • 1 stevia packet
  • 1/2 tsp vanilla extract
  • 2 pieces of 40 cal/slice bread (or bread of choice)
  • 3 TBSP raw old fashioned rolled oats
  • 1 TBSP coconut flour
  • 2 TBSP COR-Fetti whey protein (by cellucor)
  • 1 TBSP unsweetened applesauce
  • 2 TBSP unsweetened almond milk
  • 1 stevia packet
  • 1/4 tsp vanilla extract
  • 1/4 tsp imitation butter extract

Mix the egg whites, unsweetened almond milk, stevia packet, and vanilla extract. Cut 2 pieces of 40 cal/slice bread into 4 pieces each, 8 squares total. Dip the bread in the egg white mixture for 2-3 minutes per side. Spray a mini muffin pan with nonstick spray. Press one square into each mold. Bake at 350 F for 15 minutes until the egg whites are cooked. Grind the oats into a flour. Mix it with the remaining ingredients. Place some of this cake batter mix inside the center of each baked cup.I then thinned 1 tbsp COR-Fetti protein with 2 tsp almond milk and drizzled it on top of the cups.Nutritional Information for everything: 285 calories; 4 g fat, 38 g carbs (11 g fiber), and 28 g protein
