Blueberry Cobbler Bars
This was my Friday night #turnup last week. I killed it at the gym, baked healthy blueberry cobbler bars, and watched movies and anime with Jesse - now tell me I'm not wild.Blueberry Cobbler BarsMakes: 16Crust
- 1/2 cup almond meal/flour
- 3/4 cup oat flour (I grind up raw oats in a knock off magic bullet)
- 1/2 cup coconut oil
- 2 TBSP stevia
Filling
- 4 whole eggs
- 1 cup plain Greek yogurt (227 g)
- 1 cup oat flour
- 1/2 cup granulated stevia
- 1 TBSP vanilla extract
- 1 tsp butter extract
- 1.5 cup blueberries
Crumble
- 1/4 cup oat flour
- 1/4 cup raw rolled oats
- 2 TBSP coconut oil
- 1 TBSP stevia
- 1 TBSP water
First, mix all of the crust ingredients. I don't buy oat flour, I make it from raw old fashioned rolled oats by grinding it in a knock-off magic bullet. Spray a 9x9 baking dish and spread the crust thin on the base. Bake at 350 F for 14-16 mins.Mix all of the filling ingredients except for the blueberries. Pour on top of the baked crust. Then swirl in the blueberries.Mix all of the crumble ingredients. Crumble/sprinkle on top of the filling in the dish. Bake at 350 for 30 mins. Let cool so that the crust sets. I let mine sit in the fridge two hours. Then cut into 16 pieces and serve.For 1 bar: 169 cals; 13 g fat, 11 g carbs (2 g fiber, 2 g sugar), and 5 g protein.The crust increases the calorie content significantly and can be skipped, but I like the crunchy texture it adds!Any unfamiliar ingredients are found on iherb.com!
