Blueberry Muffins - Classic!

Love how the texture of these turned out!! Fresh and fluffy goodness worth waking up for! These muffins make for a quick snack on the go. Inspired by the #BreakfastByBai recipes going around in September in October! The Bai adds the PERFECT blueberry sweetness undertones to these muffins. If you don't have it, you can use almond milk but I seriously seriously recommend it - legit perfect.

Okay bear with me for the next week or so. The site is getting a makeover!! An overhaul is far overdo and I'm ready for a change!! So if things go wonky for a bit, just be patient for me haha. I'll try to keep it under control!

Blueberry Muffins

Makes: 2 muffins

  • 1/2 scoop vanilla whey protein

  • 1/2 cup raw old fashioned rolled oats

  • 1/4 cup blueberry Bai 5 drink (I usually find these in Target)

  • 1 TBSP coconut flour

  • 1 egg white

  • 1/2 tsp baking powder

  • 2 stevia packets

  • 1/2 cup blueberries

Grind the oats into a flour. Then add the remaining ingredients except the blueberries and mix again. Fold in the blueberries. Pour into two cupcake molds and bake at 350 F for 20 mins!!
