Brownie Chunk Overnight Oatmeal

Overnight oatmeal: oatmeal formed overnight; oatmeal for lazies (like me); oatmeal of the cold variety; oatmeal with a rebel attitude; oatmeal that gives you an excuse to audibly exclaim "ch-ch-chia!"; oatmeal that will never overflow the bowl in the microwave, making the microwave sticky and leaving you sad & defeated.

Fudge brownie chunk overnight oatmeal was such a yes. Simple, yet so perfect. It has pieces of Beechies Bakehouse fudge protein brownies inside; I'm addicted to them halp.

Brownie Chunk Overnight Oatmeal

Serves: 1

  • 1/2 cup raw old fashioned rolled oats

  • 1/2 cup unsweetened almond milk

  • 1/4 cup plain greek yogurt

  • 1/2 TBSP chia seeds

  • 1 stevia packet

  • 1 High protein fudge brownie

In a bowl, mix everything except for the brownie!! Once mixed, let it sit overnight in the fridge. The oats soften up and the chia seeds plump up! In the morning, cut up the high protein fudge brownie and add it to the oatmeal. Enjoy!

Brownie nutrition: 142 calories; 4 g fat, 26 g carbs (21 g fiber), and 14 g protein

Overall nutrition: 370 calories; 9 g fat, 58 g carbs (28 g fiber), and 27 g protein
