"Buttered" Garlic Cauliflower Mash

I. Freaking. Love this. It's like a comforting, buttery mashed potato recipe except...minus the butter or the potatoes. Precisely what I want :DD I used butter extract to give a butter flavor! Butter extract is just like vanilla or almond extract; it's just a flavor, no calories or actual butter! My boyfriend was seriously confused by this. I never tell him what I make him, I just feed him and let him enjoy XD Well he goes...what is this? I go cauliflower, why? He responds. Well it tasted like butter...but I thought to myself...but Kim made this...I don't understand. Ha!   • 4 cups raw cauliflower
  • 2 TBSP unsweetened almond milk
  • 1/2 TBSP butter extract
  • 1 tsp garlic powder

Begin by steaming your cauliflower. A lot. A lot a lot. Until it's soft and falling apart. Then strain it so it's dry. Then, place it in a bowl with the remaining ingredients. Use a hand blender to mash/blend it to a purée. EAT!
