Buttertoffee Banana Nut French Toast Cups

My breakfasts and desserts usually look like (and are!) preettttty similar. What can I say, I love healthy sweet treats. This was so great; buttertoffee banana nut French toast cups.   • 2 egg whites
  • 2 TBSP mashed banana
  • 1 stevia packet
  • 1/4 tsp almond extract
  • 1/2 tsp vanilla extract
  • 2 pieces bread of choice (I use natures own 40 cal/slice wheat)

Filling

  • 1/4 cup plain Greek yogurt
  • 1 TBSP unsweetened almond milk
  • 1/2 TBSP sugar free butterscotch pudding mix
  • 1/2 banana nut muffin quest bar

Mix all of the french toast base ingredients except for the bread. Cut the 2 slices of bread into 4 pieces each, 8 squares total. Dip the bread in the egg white mixture for 2-3 minutes per side. Spray a mini muffin pan with nonstick spray. Press one square into each mold. Bake at 350 F for 13-15 minutes until the egg whites are cooked. Mix the Greek yogurt, unsweetened almond milk, sugar free butterscotch pudding mix, and English toffee stevia drops. Place some of this mixture inside the center of each baked cup. Cut 1/2 banana nut muffin quest bar into 8 pieces and top each cup with one piece. Then eat! Them all.
