Caramel Apple Tart (vegan, gluten free)

CARAMEL APPLE TART my house smells amazing right now. And this is single serve wooooop!! Im finally definitely in Fall mode. I've got Nightmare Before Christmas music playing while I bake #mood October is the best time of the year if you ask meeeee.

Caramel Apple Tart (vegan, gluten free)

Serves: 1

Tart Base

  • 2 TBSP coconut flour

  • 1/2 TBSP almond meal

  • 1 TBSP coconut oil

  • dash of salt

  • 1 stevia packet

Caramel

  • 20 g pitted dates

  • 1/2 TBSP coconut oil

  • 1/4 cup water

Apple Topping

  • 25 g peeled apple

  • 1 TBSP water

  • stevia

  • cinnamon

Preheat the oven to 350 F. Mix your tart base ingredients, then press it into a mini tart pan sprayed with nonstick spray and bake at 350 F for 5-7 mins until golden. Remove and let cool TEN MINUTES to set the crust.

On a stove top, cook your pitted dates with coconut oil and water. Mash the dates while heating to get a creamy caramel sauce. You know it is finished once the water cooks off & the consistency is left smooth and creamy. Place this on top of the cooled tart/pie crust.

Dice 25 g peeled apple & microwave it for 30 seconds with 1 tbsp water, a dash of stevia, & a dash of cinnamon. Drain off any excess water, then add the apples on top of the caramel in the tart crust. EEEAT.
