Carrot Cake Overnight Oats
So I've got a carrot cake oatmeal recipe, a carrot cake egg white oatmeal recipe, and now carrot cake overnight oats! Take your pick!Carrot Cake Overnight OatsServes: 1
- 1/2 TBSP chia seeds
- 1/2 cup raw old fashioned rolled oats
- 1/2 cup unsweetened almond milk
- 1/4 cup plain Greek yogurt
- 1 TBSP chopped pecans
- 1/4 cup shredded carrot
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/8 tsp nutmeg
- 1/8 tsp ginger
- 1 stevia packet
Mix all of the ingredients in a bowl with a spoon. Let sit in the fridge overnight so the chia seeds plump up. Top in the morning with more pecans, shredded carrot, some raisins, and/or sugar free syrup. Whatever floats your boat! Eat cold :)
