Cherry + Raspberry Pie Bars

Late night improv baking is the best kind of baking. Sunday night #turnup clearly I'm wild can't tame me. K anyways. I baked some Cherry + Raspberry Protein Pie Bars. Cause I'm bored and I can. But mostly cause I've been wanting some ever since Carla posted some unhealthy ones. I've posted a YouTube video of the process  (bored and I can #bored #ican).   • 1 cup coconut flour
  • 2 scoops cinnamon swirl cellucor protein powder
  • 1/2 cup unsweetened applesauce
  • 3/4 cup unsweetened almond milk
  • 1/4 cup stevia
  • 1 whole egg
  • 2 egg whites
  • 2 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1 tsp baking powder

Fruit Filling

  • 2 cups frozen raspberries
  • 1/2 cup frozen cherries
  • 1 TBSP stevia

Mix all of your dough ingredients. Spray a 9x9 baking dish and use 2/3 of the dough to form the crust, pressings evenly. Microwave frozen raspberries and frozen cherries for 1-1.5 mins then mash with the stevia. Spread evenly on top of the crust. Use the rest of the dough to dollop randomly on top. Bake at 350 F for 30 mins, then 400 F for 10 mins. Let cool for 10 mins because the crust will be soft at first. Let firm in the fridge for an hour. Slice into 9 pieces and enjoyFor 1 bar: 120 cals; 3 g fat, 15 g carbs (7 g fiber), and 9 g protein
