Chicken Nuggets
I made something like this a looooong time ago and I'm not sure why I never made it since - I guess I just forgot about it. I actually measured this time so that I could keep it as a recipe in the future :) These are surprisingly similar to real chicken nuggets - I wouldn't know the difference! This is a recipe for one person but can VERY easily be multiplied to serve many!Chicken NuggetsServes: 1
- 4 oz raw chicken
- 2 TBSP liquid egg whites (or 1 egg white)
- 2 TBSP almond meal
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
First, preheat the oven to 350 F. Then cut the raw chicken into small pieces the size you want your nuggets to be. On a small plate or flat surface, mix the almond meal, garlic powder, and onion powder. Dip a nugget piece into the egg whites, and then roll it in the almond meal mixture until fully coated. Place it on a baking sheet coated with a nonstick spray. Do this for all of the pieces. Once you've coated all of the chicken nuggets, bake them at 350 F for 20 minutes. Then, flip them over and broil them for 5 more minutes. And you're done!I dipped mine in a clean honey mustard sauce (1 TBSP dijon mustard, 1 TBSP vinegar, and 1.5 TBSP stevia). Ahh :DD
