Chocolate Almond Shortbread Cookies

These are. Quite possibly. The best cookies I've ever made. Which is reassuring since right before this I baked the worst fail recipe ever so it all balances out I guess? Chocolate almond SHORTBREAD cookies. The best shortbread texture. ANYWAYSSSS. Expect more baking from me now that I have more time to focus on it!!!

Chocolate Almond Shortbread Cookies

Makes: 7 cookies

  • 1/4 cup coconut flour

  • 1/3 cup almond meal

  • 1.5 scoops vanilla whey protein (45 g)

  • 1/4 cup unsweetened almond milk

  • 2 TBSP melted coconut oil

  • 1/2 tsp baking powder

  • 1/4 tsp almond extract

  • 2 stevia packets

  • 7 chocolate covered almonds

In a bowl, mix your ingredients except for the almonds! It helps to mix the dry first, then add wet ingredients. Spray a pan with nonstick spray and roll your batter into 7 dough balls. Lightly flatten on the pan. Crush the almonds on top of the cookies. Bake at 375 for 8-10 mins, until lightly brown. EAAAAAT.

1 cookie: 120 cals; 8.5 g fat, 5 g carbs (2.5 g fiber), 7.5 g protein
