Chocolate Chip Almond Cookies with Caramel Dollops

I had time to bake this weeekend :DDD. Cookies it is!! Chocolate chip almond cookies with caramel dollops on top . They came out so so good and they have the PERFECT crisp to them balanced out with the soft caramel dollops. Just in time for some Super Bowl pre-game snacking. Anyone watch the game? Ouch, my heartstrings.

Chocolate Chip Almond Cookies with Caramel Dollops

Makes: 12 cookies

Cookie Dough 

  • 1/2 cup almond meal

  • 3/4 cup almond butter (I used chocolate chip Rawmio almond butter)

  • 1 whole egg

  • 1/4 cup baking stevia

  • 1/4 cup chocolate chips (I used Rawmio Raw chocolate)

Caramel Sauce

  • 1/2 cup pitted dates, soaked (80 g)

  • 1 TBSP coconut oil

  • 2 TBSP unsweetened almond milk

  • 1 tsp vanilla extract

Mix all of your cookie dough ingredients in a bowl! Should be thick and gooey. You can use any kind of chocolate you want (raw, sugar free, chocolate Quest bar chunks, whatever). Roll into 12 even dough balls and flatten on a baking sheet with a fork. You don't need to grease the sheet. Bake at 375 F for 10-12 minutes until lightly browned.

While that's baking make the caramel sauce. Use dates that have first been soaked in water (to soften). But you want to strain the dates and not include the water. Blend all ingredients for the caramel sauce together. Add small dollops on your cookies (you'll prob have extra so like eat it by the spoonful duh) and enjoy!!!
