Chocolate Chip Cookie Dough Pancakes

These quest bars have me going CRAZY with ideas! I am so in love with this new flavor! All the flavors are awesome but this one.... oh my word. Drool. After talking with Sarah about the craving to do this, we decided to twin it up today (after waiting weeks of choosing a day we both had time to!).   • 1/4 cup old-fashioned rolled oats
  • 2 TBSP coconut flour
  • 3 egg whites
  • 2 TBSP plain Greek yogurt
  • 1/2 tsp baking powder
  • 1/4 tsp vanilla extract
  • 1/4 tsp butter extract (or more vanilla extract)
  • Stevia (Optional)
  • 1/2 chocolate chip cookie dough quest bar

First, grind the oats into an oat flour. I use my magic bullet. Then add everything else EXCEPT for the quest bar! Once blended, break the quest bar into pieces and mix it into the batter with a utensil. Then cook in a pan sprayed with nonstick spray. Use a medium heat for 4-5 minutes on one side, flip, and cook another 3-4 minutes. They're fluffy and divine! Mine made 3 pretty large cakeys; 4 smaller ones could've been formed if that's your thing.I topped mine with a maple cocoa sauce (1 TBSP plain Greek yogurt, 1 TBSP sugar free breakfast syrup, 1 TBSP unsweetened almond milk, 1 tsp unsweetened cocoa, and stevia) and a hazelnut peanut fluff (1 TBSP peanut flour, 1 TBSP pumpkin purée, and 8 drops hazelnut stevia). AMAZING. I'm glad nobody was around to see me lick the plate clean.
