Chocolate Chip Orange Crepes

I've been having a lot of crepes lately stuffed with half melted quest bars. The combination is unexplainable, you have to try it yourself! It allows for so many different flavors to be combined. I love me some flavor explosionssssss. So this was orange crepes stuffed with a melty chocolate chip cookie dough quest bar and sugar free orange jelly, then topped with a healthy chocolate sauce.IMG_3325Chocolate Chip Orange CrepesServes: 1Crepes

  • 4 egg whites
  • 1 TBSP coconut flour
  • 1 TBSP ground flax (or whey protein)
  • 2 TBSP unsweetened almond milk
  • 1/2 TBSP psyllium husk (Optional)
  • 1/2 tsp baking powder
  • 15 orange stevia drops
  • dash of orange extract

Stuffing

  • 2 TBSP sugar free orange jelly
  • 1 chocolate chip cookie dough quest bar

Healthy Chocolate Sauce

  • 1 TBSP unsweetened cocoa powder
  • 1.5 TBSP unsweetened almond milk
  • 1-2 stevia packets

Blend all of your crepe ingredients in a blender. Pour half of your batter into a large pan sprayed with nonstick spray. Cook on a medium heat for 2 minutes, flip, and cook another 1-2 minutes. Cut your quest bar in half so you have two long pieces. Roll your crepe around one piece and 1 TBSP of sugar free jelly. The quest bar should slightly melt since the crepe is hot. If it doesn't, microwave for 10 seconds. Repeat the process for the other half of the batter, the other quest bar half, and 1 TBSP jelly. Make the chocolate sauce by mixing the cocoa powder, almond milk, and stevia. Pour on top. Devour. Omnomonomnom.
