Ooo I gots mahself an ice cream cookie sandwich!! Cookies of choice? Chocolate chip white chocolate protein cookies of course. Fave cookie recipe I do by far!! In the middle is banana "ice cream" (1 frozen banana blended with 1 pint of wink desserts) and the ice cream sandwich was rolled in sugar free chocolate!

Chocolate Chip White Chocolate Cookies

Makes: 4 large cookies

• 1 scoop (60 g) chocolate chip pancake mix

• 1/4 cup white chocolate peanut butter (or other nut butter)

• 1 egg white

• 2 TBSP stevia (or two packets)

• 2-3 TBSP water

In a bowl, mix all of your ingredients! Form into 4 large cookies (or 8 small cookies) on a baking sheet sprayed with nonstick spray. Bake at 350F for 8 mins. And that's it!! Easy peasy.
