Chocolate Cookie Dough Cupcakes
Yeeee - post workout snackie. I gots mahself a road bike since my new town is soo bike-friendly and I am in love with it. I could ride every single day. It's such a great investment and I'm loving how easy it is on my body as opposed to weightlifting and the gym. It was really aggravating my fibromyalgia for the last year and I got so sick of fighting it. SOOOO road bike!! I'm not the best yetttt but I can only get better from here. :) I have fun regardless!
So I made this after my ride. Chocolate protein cupcakes topped with a chocolate Cellucor protein drizzle and protein cookie dough. For the cookie dough, I used Abs Protein Pancakes mix mixed with water. I was too lazy to make my go-to cookie dough recipe today (which is amazing if you don't have this pancake mix). And now I just vegetate with a happy belly.
Chocolate Cookie Dough Cupcakes
Makes: 3 cupcakes
1/2 scoop molten chocolate Cellucor protein
1/2 cup raw oats
2/3 cup unsweetened almond milk
1 TBSP cocoa powder
1 TBSP coconut flour
1 TBSP ground flax seeds
1/2 tsp baking powder
2 stevia packets
Blend all of your ingredients in a blender! It helps to grind the oats down first. Once even, pour your batter into 3 cupcake molds sprayed with nonstick spray. Bake at 350 for 20 mins. Let cool and enjoy!!
Go-To Cookie Dough
3 TBSP oat flour (old fashioned rolled oats ground up)
1 TBSP coconut flour
1 TBSP unsweetened applesauce
1 TBSP sugar free breakfast syrup
2 TBSP water
10-12 drops Vanilla creme sweetleafstevia drops
1/4 tsp imitation butter extract
Just mix everything in a bowl!!
