Chocolate Espresso Bliss Bars

Hokay so. Imagine you're at the beach. You've got a full 10 days away from any responsibility and it's only day 2. You're resting face down on a towel in the sand. Two hot masseurs (or masseuses, whatever floats your boat) are giving you an endless massage. There's fresh fruit to your side and music to sooth your mind. You hear sounds of kids playing, waves crashing, and carefree birds, yet all the noises merge into a subdued ambience. Those emotions are compiled into an edible bar, and you've got this recipe.   • 1/4 cup almond meal
  • 1 scoop vanilla whey protein
  • 1/3 cup unsweetened applesauce
  • 1 whole egg
  • 1 TBSP coconut oil
  • 1 tsp espresso powder
  • 1 stevia packet (Optional)
  • 1 double chocolate chunk quest protein bar
  • 2 TBSP coconut oil

Mix the almond meal, vanilla whey protein, unsweetened applesauce, egg, 1 TBSP coconut oil,  espresso powder, and stevia packet. Then cut 1 double chocolate chunk quest nutrition protein bar into small pieces and stir into the batter. Pour everything into a square baking dish sprayed with nonstick spray. Bake at 350 F for 18-20 mins. On top, pour 2 TBSP of melted coconut oil. Place in the fridge for 15 ish minutes until the coconut oil is a hardened and everything has cooled.
