Chocolate Mint Donuts

I made these babies for part of dessert one night - I had one and saved the rest buuuuut you could also make and eat the entire recipe at once since the donuts are only 70 calories each - 280 total! IMG_7365Chocolate Mint DonutsMakes: 4 donutsChocolate Donut Batter

  • 1/2 cup raw old fashioned rolled oats
  • 2 TBSP ground flax seeds
  • 3 egg whites
  • 1.5 TBSP unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1 tsp vanilla extract
  • 2-3 stevia packets

Mint Icing

  • 1/2 cup lowfat cottage cheese
  • 1/2 tsp vanilla extract
  • 8 mint stevia drops

For the donuts, grind your oats into a flour. Then add the remaining donut batter ingredients and blend again. Spray a donut mold pan with nonstick spray and pour the batter into the pan, forming 4 donuts. Bake at 350F for 10 minutes.Make your vanilla mint icing by blending the cottage cheese, vanilla extract, and mint stevia with a hand blender.
