Chocolate Mint French Toast

GOOD MORNING TO ME! Since I've began my new job, I don't have as much time for fun breakfasts like pancakes and french toast. After a week of overnight oats and toast, I reeeeeally wanted french toast for breakfast. I'm soooo glad I went with this one.   • 2 egg whites
  • 2 TBSP unsweetened almond milk
  • 1/2 TBSP unsweetened cocoa powder
  • 12-15 mint stevia drops
  • 1 stevia packet (Optional)
  • 2 slices of 40 cal/slice Nature's Own Whole Wheat bread

Mint Coconut Cream

  • 1/4 cup plain greek yogurt
  • 8 mint stevia drops
  • 1/2 tsp coconut extract
  • 1 TBSP unsweetened coconut shreds
  • 1 stevia packet
  • 1 drop green food coloring (Optional)

Chocolate Syrup

  • 2 TBSP unsweetened cocoa powder
  • 2 TBSP unsweetened almond milk
  • 1 TBSP sugar free syrup
  • stevia to taste

     Whisk together the 5 ingredients listed for the french toast base (egg whites, milk, cocoa powder, and two stevia types). Then let your bread soak in the egg white mixture for 4-5 minutes per side. I use this bread because it soaks up the egg white mixture really well, as opposed to Ezekiel bread. While it's soaking, make your mint coconut cream by mixing all of the ingredients with a utensil. Then, make your chocolate syrup by mixing/whisking all of the listed ingredients with a utensil. Now that the bread is soaked, cook on a low/medium heat in a pan sprayed with nonstick spray. Let each side cook for 3-4 minutes, or until the egg whites are cooked through. Then top with the mint coconut cream and the chocolate syrup. Add more unsweetened coconut shreds on top (1 TBSP) and DIG IN!
