Chocolate Mint Waffle

My chocolate protein waffle and I exchanged dirty secrets over the breakfast table this morning. I went first, yet he was reluctant to share. It took time and patience but eventually he opened up about his deepest secret. He told me to look past his sweet, dreamy swirls of mint cream, coconut ‘cream cheese’ cream, and cocoa coconut almond butter (Barney Butter brand). I tried but could only see his crisp, waffley exterior. He demanded I dig deeper than the cacao nibs and unsweetened shredded coconut. Again, I could only see the waffle for his soft, cocoa center. He exclaimed that I was nearing his secret, but not quite there. I approached him closer, anticipating the reveal. "You can tell me," I whispered into his waffle ear.   • 1/2 cup raw old fashioned oats
  • 1 cup steamed cauliflower
  • 1/2 scoop chocolate whey protein
  • 1 TBSP unsweetened cocoa powder
  • 2  egg whites
  • 1/2 tsp baking powder
  • stevia

Grind the oats into a flout. Then add the remaining waffle ingredients and blend again. Once smooth, cook in a sprayed belgian waffle maker.To make the mint cream, mix 2 TBSP plain Greek yogurt, 1/2 TBSP unsweetened almond milk, 8 peppermint stevia drops, and 2 drops green food coloring.To make the coconut 'cream cheese' cream, mix 2 TBSP plain Greek yogurt, 1/2 TBSP unsweetened almond milk, 8 coconut stevia drops, and 1 drop cream cheese baking emulsion (all star extracts brand from amazon).
