Chocolate Raspberry Pudding Parfait

I can't remember the last time I made pudding... But today I wanted pudding, dangit! So I made it :) I had it after a workout and snuck in some protein by adding egg whites and greek yogurt.   • 1, 4-serving package of sugar free/fat free chocolate pudding mix
  • 2 tsp instant espresso powder
  • 1 stevia packet
  • 1 and 1/3 cup unsweetened almond milk
  • 2 egg whites
  • 1/2 cup plain greek yogurt

Raspberry Chia Jam

  • 2 cups frozen raspberries
  • 2.5 TBSP chia seeds
  • 2 stevia packets

Vanilla Yogurt

  • 1 cup plain greek yogurt
  • 2 tsp vanilla extract
  • 2 stevia packets

First make the rich chocolate pudding. Put the chocolate pudding mix, espresso powder, and stevia in a saucepan. Then slowly add the almond milk. Heat the pan over a medium heat until the pudding thickens. Turn off the heat. Whip the egg whites until stiff peaks form. Fold into the pudding mixture. Once cool, stir in 1/2 cup plain greek yogurt. Store in the fridge until you want to eat it.Make the raspberry chia jam by microwaving the raspberries for 1-1.5 minutes until melted. You want to keep the juice that comes off! Add the chia seeds and stevia and mash a bit. Place this mixture in the fridge for at least 2 hours to let the chia seeds plump up before eating it.Mix the greek yogurt, vanilla extract, and stevia packets to make vanilla yogurt.Assemble 4 parfaits by layering each component. Top with more raspberries if desired!
