Cinnamon Coconut Baked Oatmeal

Cinnamon coconut baked oatmeal topped with a maple coconut cream, sugar free maple syrup, chopped french toast protein bar, unsweetened shredded coconut, and melty sugar free chocolates. Ain't no shame in oatmeal for dinner. These baked oats ended up sooooo fluffy and moist on the inside; I really really like my new method for them!!
Cinnamon Coconut Baked Oatmeal
Serves: 1
1/2 cup rolled oats
1/2 cup water
2/3 cup unsweetened almond milk
1 egg white
1 TBSP coconut flour
1 stevia packet
1/2 tsp coconut extract
1/4 tsp cinnamon
Microwave the oats with 1/2 cup water for 1:30 mins. Then once it's cooked, mix the oats with everything else! Pour into a sprayed ramekin and bake at 375 F for 30-32 mins.
To make the coconut maple cream. mix 2 TBSP plain greek yogurt, 1 TBSP sugar free syrup, and 5-7 drops coconut stevia drops.
