Cinnamon Graham Cracker Protein Oats

I always seem to get into "parfait kicks" where I always want to make one for breakfast. But then I forget for a while. And then I make a ton at once again aahah. This was so good! I love having cold oats in the morning. I used to dislike them but they're refreshing. For this parfait I have puffed millet, cold and creamy cinnamon graham cracker protein oatmeal, a chopped up pumpkin protein bar, walden farms caramel syrup, and hemp seeds.The pumpkin protein bar recipe is from @tastyhealth's ebook.IMG_4564Cinnamon Graham Cracker Protein OatsServes: 1

  • 1/4 cup raw old fashioned rolled oats
  • 1/2 cup unsweetened almond milk
  • 1/4 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1 stevia packet
  • 1 egg white
  • 1/4 cup plain Greek yogurt
  • 1/2 scoop cinnamon graham cracker whey protein (Optimum Nutrition brand)

In a bowl, mix the oats, almond milk, cinnamon, vanilla extract, and stevia packet. Microwave for 3:30-4:00 minutes, or until the liquid is nearly cooked off. Then vigorously whisk in the egg white. Microwave another 30 seconds to fully cook the egg white. Place in the freezer for 5-10 minutes to quickly cool. When it’s not extremely hot, swirl in the plain Greek yogurt and whey protein. Then eat!
