Coconut Almond Oat Cake (vegan, gluten free)

Hiii. Just look at this. Coconut Almond Oat Cake layered with a chocolate protein icing, salted caramel sauce, chocolate almonds, and coconut ash & banana dark chocolate (this chocolate is heavenly). Happy Monday to meeeee. Super simple recipe, too. ️Just 4 ingredients!!!

Coconut Almond Oat Cake 

Serves: 4

  • 2 containers coconut almond Modern Oats

  • 1 TBSP ground flax

  • 1/2 cup almond milk

  • 1/2 TBSP baking powder

  1. Grind the contents of the oat packages into a flour. Then add the other 3 ingredients and mix well!

  2. Pour the batter into a mini springform mold (sprayed with nonstick spray) and bake at 375F for 22-24 mins.

  3. Cut into 4 slices. Enjoy! (Approximately 140 calories a piece before icing)

For the caramel, blend dates with hot water, salt, & vanilla extra.The chocolate icing is a mixture 1 scoop Nuzest vanilla plant based protein, 1 TBSP unsweetened cocoa, 2 stevia packets, and almond milk to desired consistency!
