Coconut Cinnamon Swirl Protein Oats

More creamy oats!! They were so good the other day when I made the berries and cream oats that I had to try another flavor! I love how voluminous they get even though it's just 1/4 cup of oats.IMG_3895[1]Coconut Cinnamon Swirl Protein OatsServes: 1

  • 1/4 cup raw old fashioned rolled oats
  • 1/2 cup unsweetened almond milk
  • 1/4 tsp cinnamon
  • 1 tsp coconut extract
  • 8-10 coconut stevia drops (Optional)
  • 1 stevia packet
  • 1 egg white
  • 1/4 cup plain Greek yogurt
  • 1/2 scoop cinnamon swirl whey protein (cellucor brand)

In a bowl, mix the oats, almond milk, cinnamon, coconut extract, coconut stevia, and stevia packet. Microwave for 3:30-4:00 minutes, or until the liquid is nearly cooked off. Then vigorously whisk in the egg white. Microwave another 30 seconds to fully cook the egg white. Place in the freezer for 5-10 minutes to quickly cool. When it’s not extremely hot, swirl in the plain Greek yogurt and whey protein. Then eat!I served mine with a butterscotch drizzle (3 TBSP plain Greek yogurt, 1.5 TBSP sugar free syrup, 8-10 stevia drops, and 1/4 tsp butterscotch extract), almond butter, raw cacao nibs, and pieces of a baked vanilla almond crunch quest bar (bake at 375 F for 4 mins, then cut).Everything was inside of a small la tortilla factory tortilla bowl. I placed the tortilla in a mold and baked at 375 F for 8-10 mins.
