Cookie Dough Cheesecake Brownie Bars

Sometimes naming recipes can get ridiculous; I honestly don't know what to call these healthy treats without sounding absurdly pretentious. Cookie dough cheesecake brownie bars? Brownie bottom cookie dough cheesecake bars? Sweet trinity protein bark? I don't know. All that really matters is cookies dough, cheesecake, and brownie mmkayy. And it is to die for. Layer 2

  • 1/3 cup lowfat cottage cheese
  • 1 TBSP vanilla whey protein
  • 1/2 TBSP coconut flour
  • 1/2 tsp vanilla extract
  • 1 stevia packet

Layer 3

  • 3 TBSP oat flour (ground up raw oats)
  • 1 TBSP coconut flour
  • 1 TBSP raw cacao nibs
  • 1 TBSP unsweetened applesauce
  • 1 TBSP sugar free syrup
  • 2 TBSP water
  • 1 stevia packet
  • 1/2 tsp vanilla extract
  • 1/4 tsp imitation butter extract

There are 3 layers. For layer 1, microwave 1 brownie quest protein bar for 8 seconds to soften. Line a mini loaf pan with Saran Wrap, then evenly press your quest bar into the bottom of the pan. For layer 2, use a handblender to blend the 5 listed ingredients until it's smooth. Once even, spread on top of layer 1. For layer 3, mix the listed ingredients in a small bowl until even. Spread on top of your layer 2. Then freeze for 2-2.5 hours. Once solid, remove from the pan and cut into 8 pieces. Let soften for a couple minutes if needed.
