Cookie Dough Donuts

This is a late post, but I wanted to show you the crazzzyyyy good itty bitty mini cookie dough donuts I made before rock climbing the other day. It makes 12 mini donuts you can eat AT ONCE or you can make them normal size to make 4 (also a single serving!!) I went out to Washington for another week (it's a very very long story and I will explain later soon...) last week and I had some down time for baking tons of stuff. :) It was fun. This was definitely the winner of the bunch. Mmmmm.

Cookie Dough Donuts

Serves: 1

Donut Batter

  • 1/3 cup raw oats

  • 1 TBSP almond flour/meal

  • 1/2 scoop vanilla whey protein

  • 3 egg whites

  • 1/2 tsp baking powder

  • 1 stevia packets

Cookie Dough Icing

  • 6 TBSP raw oats

  • 2 TBSP almond meal/flour

  • 2 stevia packets

  • 3-4 TBSP sugar free chocolate chips

  • 1 tsp vanilla extract

  • sugar free maple syrup

Grind the oats for the donut batter into a flour first. Then add the remaining batter ingredients and blend again. Pour into a mini donut pan (or normal donut) and bake at 350 F for 8 mins.

While that bakes, make the icing! Grind the oats into a flour. In a bowl, add the remaining ingredients. Just add enough syrup until you reach a nice doughy consistency. Place on da doughnuts and eeeeeeat. Eat all since its 1 serving!!
