Cookies and Cream Protein Donuts

Me at work all day: "Can I be home baking yet?!" I am in a baking mood and was so eager to play in the kitchen. I made....one of the most incredible desserts.... Holy molyyyyyy it's delicious. Cookies and cream protein donutsssss using the new cookies and cream quest bar!! Heyoooo, the crunchy bits are awesome.IMG_1013[1]Cookies and Cream Protein DonutsMakes: 4 donutsDonut Base

  • 1/3 cup raw old fashioned rolled oats
  • 1 TBSP almond meal/flour
  • 1/2 scoop chocolate whey protein
  • 3 egg whites
  • 1 TBSP unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 2 stevia packets

 Topping

  • 2/3 cup lowfat cottage cheese
  • 1/2 scoop vanilla whey protein
  • 1 stevia packet
  • 1 tsp unsweetened cocoa powder
  • 1/2 cookies and cream quest bar

Preheat the oven to 350 F. Grind the oats into a flour. Then add the remaining donut batter ingredients and blend again. Spray a donut mold pan with nonstick spray. Pour batter amongst 4 donut molds. Bake at 350 F for 10 minutes.For the topping, use a handblender to blend 2/3 cup lowfat cottage cheese, 1/2 scoop vanilla whey protein, and 1 stevia packet. Then split this mixture in half in two separate bowls. Add 1 tsp unsweetened cocoa powder to one of the halves. This way you have two separate icing flavors to use together on each donut. Once you've iced the donuts, crumble 1/2 cookies and cream quest protein bar amongst the top of the donuts.Nutritional info for 1 donut before toppings: 67 calories; 2 g fat, 6 g carbs (2 g fiber), and 7 g proteinNutritional info for 1 donut after toppings: 123 calories; 3 g fat, 10 g carbs (3 g fiber), and 17 g protein
