Cookies & Cream Pancake Puffs (ver. 2)

It was morning. As I cut open my cookies & cream quest protein bar, the pieces began to fret. "Shh, my children," I said, explaining that I'm a protector, pairing them with sugar free chocolates and tucking the duo safely together in a chocolate pancake puff blanket. "Safe and concealed, I promise." What they failed to realize, however, was that I was merely concealing their emotional awareness, as their fate ultimately led to death by consumption. I'm sorry, my dear cookies & cream quest bar. You deserved more in life. Love is an evil thing.

Cookies & Cream Pancake Puffs

Makes: 7

  • 1/3 cup raw old fashioned rolled oats

  • 1 TBSP coconut flour

  • 1/2 scoop chocolate whey protein

  • 2 egg whites

  • 2 TBSP unsweetened almond milk

  • 1 TBSP unsweetened cocoa powder

  • 1/2 tsp baking powder

  • 1 stevia packet

  • 1 cookies & cream quest nutrition protein bar

  • 1/3 sugar free chocolate bar

  1. Grind the oats into a flour. Then add the remaining ingredients except for the quest bar and blend again.

  2. Cut the quest protein bar into 8 pieces. Except you only need 7 so just eat the extra piece because how can you not ;p.

  3. Begin to heat an ebelskiver pan with a medium heat. If you don’t have one, you can make these like pancakes. Spray the heated ebelskiver pan with a nonstick spray, fill 1/2 way with the pancake batter, place a quest bar piece inside. Also place some of the sugar free chocolate bar inside (itll get melty and amazing). Then cover it with a little more pancake batter. Repeat for all 7 positions on the pan.

  4. Once the bottoms are lightly brown, flip the pancake puff to cook the other side. Once lightly browned on the second side, remove!
