Espresso French Toast
A wonderful breakfast option. Even though I had it for dessert :D teheheheEspresso French ToastServes: 1French Toast
- 2 egg whites
- 2 TBSP unsweetened almond milk
- 1 tsp instant espresso
- 1 tsp vanilla extract
- 1 stevia packet
- 2 pieces of 40 calorie/slice bread (natures own brand)
Vanilla Icing Fluff
- 1/3 cup lowfat cottage cheese
- 1 tsp vanilla extract
- 12-15 vanilla stevia drops
- 1/8 tsp xanthan gum (Optional, to thicken)
Mix the french toast ingredients (except for the bread). Then place the bread in the mix for 2-3 minutes per side so it's soaked. Cook in a sprayed pan over a medium heat for 4-5 minutes per side, or until the egg whites are cooked.With a handblender, blend the cottage cheese, vanilla extract, stevia, and xanthan gum to make the icing. Place between the toast slices.I also added vanilla espresso almond butter, vanilla almond butter, and chocolate brownie quest bar pieces on top.
