Gingerbread Cookies

Tonight's healthy task: gingerbread cookies wauwwwww. Dipped in coconut chocolate rawmio because of course it's dipped in coconut chocolate rawmio.

Gingerbread Cookies

Makes: 12

  • 1/2 cup almond meal

  • 1/2 cup buckwheat flour (or oat flour)

  • 1/2 cup baking stevia

  • 1/2 cup gingerbread peanut butter (or standard peanut butter)

  • 1/4 cup unsweetened applesauce

  • 1/4 cup unsweetened almond milk

  • 1/4 tsp baking soda

  • 1/8 tsp ginger

  • 1/8 tsp cinnamon

Mixxxx all of your ingredients in a bowl. Spoon the batter into 12 cookie balls and lightly flatten onto a baking sheet sprayed with nonstick spray. Bake at 375 F for 7-9 mins and you're done!
