Healthy Funnel Cake

STOP what you're doing and make this; thank me later. Dessert last night was a healthy funnel cake topped with strawberries. IT'S PERFECT. Pictured is just half the recipe! I am so happy.IMG_0678Healthy Funnel CakeServes: 1Batter

  • 1/2 cup old fashioned rolled oats into a flour
  • 2 TBSP coconut flour
  • 1 egg white
  • 5 TBSP unsweetened almond milk
  • 1/4 tsp baking powder
  • 1/2 tsp vanilla extract
  • 1 tsp butter extract
  • 2 stevia packets

Topping

  • 1 TBSP coconut flour
  • 2 TBSP stevia

First, grind the oats into a flour. Then add the remaining funnel cake batter ingredients and blend again. Heat a large pan with nonstick spray. Then pour half of your batter in the pan, into swirls. Cook on medium/high heat for 2-3 minutes until the tops are cooked through. Remove from pan. Repeat for a second funnel cake with the remaining batter. Make the topping by mixing the coconut flour and stevia. top with strawberries, if desired.For full recipe with no strawberries: 281 calories; 7 g fat, 41 g carbs (13 g fiber), 13 g protein
