Healthy Oreo

Last weekend was Jesse's birthday and there were oreo cookies and smores there. Even when I ate poorly, I never really cared much for oreos. But for some reason I really wanted one O_O Sooo... of course I made my own this weekend! :D And oh my goshhhh this was great. The outer cookies were so perfectly crisp and dense. Just amazing. I have a feeling I'll be making another for the next few nights in a row.IMG_9415Healthy OreoServes: 1Oreo Cookies

  • 1/3 cup garbanzo bean flour
  • 1/4 cup water
  • 1.5 TBSP unsweetened cocoa powder
  • 2 stevia packets
  • 1 tsp vanilla extract

Cookies and Cream Filling

  • 1/3 cup lowfat cottage cheese
  • 1 TBSP cookies and cream whey protein
  • 5-7 stevia drops

Combine all of the oreo cookie ingredients and whisk them together. It should be pretty thick! Spoon into two portions in a pan sprayed with nonstick spray. You want them sort of thin and as wide as you can get them. Let cook on a low heat for 2 minutes, flip, and cook another 2 minutes. Those are your two outer cookies! Make the filling by first blending the cottage cheese with a handblender. It gets a lot creamier :D Then stir in the whey protein and stevia with a spoon or knife. Spread between the two cookies and enjoy! Ommmnomnomnom.
