Kimchi Pancakes
I honestly have no clue if this is made "traditionally", but I heard of kimchi pancakes the other day and was soo intrigued I decided to make my own. It's SUCH a cool twist to traditional pancakes. Savory and so good! If you like kimchi, you'd like this :)Kimchi PancakesServes: 1Pancakes
- 1/4 cup raw old fashioned rolled oats
- 1 TBSP coconut flour
- 1 TBSP ground flax seed
- 3 TBSP unsweetened almond milk
- 3 egg whites
- 4 oz chopped kimchi (approx. 2/3 cup)
- 1 chopped scallion
Peanut Soy Syrup
- 2 TBSP peanut flour
- 1.5 TBSP sugar free syrup
- 2 tsp braggs liquid aminos
- 1 TBSP unsweetened almond milk
First grind your oats into a flour. Then add the coconut flour, flax seed, almond milk, and egg whites and blend again. Then use a spoon to stir in the kimchi and chopped scallion. Spray a large pan with nonstick spray and pour all of your batter in. Cook on a medium heat 4-5 minutes, flip, and cook another 4 minutes, or until the eggs are cooked completely. Cut the pancakes into squares.Make the peanut soy syrup for serving with the pancakes by mixing the 4 listed ingredients. Eat!
