Lemon Blueberry Chia Parfait

Refreshing lemon blueberry snack parfaits I made :). Sweet lemon chia pudding, lemon greek yogurt, blueberries, banana, and crushed almonds. Loooove it and so easy.

In even more exciting news, I GOT A CAMERA!! I pooled up my Christmas money and finally bought a fancy fancy camera :DDD. I always get asked what I take pics with; I've always used my iPhone for all my pictures BUT I bought my first legit DLSR camera so some pictures will be taken from it from now on (like this one!). I love it it's my baby what should I name it?! Best answer gets 11 majestic internet points to use towards nothing.

Lemon Blueberry Chia Parfait

Serves: 2

  • 1/4 cup chia seeds

  • 3/4 cup lemon Bai 5

  • 1 stevia packet

  • 1 container of lemon greek yogurt

  • 1/2 cup blueberries

  • 1 banana

  • handful of crushed almond

First, make the chia pudding the night before. Mix the chia seeds, lemon bai, and stevia. If you don't have this amazing flavored drink, you could use water with a hint of lemon juice. Stir and let sit overnight so the chia seeds thicken up nicely. The next day, prepare 2 parfait cups. Layer the chia pudding, lemon yogurt, blueberries, sliced banana, and crushed almonds in each cup. Enjoy with a friend :) or save one for later!
