Lemon Cream Pie Bites

I made these right before I left for vacation last week, and I only got to try one D; but it was sooo good. I left the rest for my boyfriend to eat while I'm gone, and I got the text "Omg those lemon things r good" lol thanks Jesse. So here's the recipe for my lemon things. They're lemony. And they're things.IMG_5383[1]Lemon Cream Pie BitesMakes: 10 bitesCrust

  • 1/4 cup dried apricots
  • water
  • 1/2 cup almond meal/flour
  • 1 TBSP coconut oil

Lemon Cream Pie Layer

  • 1 lemon cream pie Quest protein bar
  • 3 TBSP unsweetened almond milk
  • 1/4 cup plain Greek yogurt 
  • 6-8 lemon SweetLeaf stevia drops (or 1 stevia packet)

Soak the dried apricots in enough water to cover for 30 minutes to soften. Drain out the water. Then use a food processor or magic bullet to blend the apricots with the almond meal/flour and coconut oil. Set to the side. This will be the base.Chop up 1 lemon cream pie Quest protein bar. Size doesn't matter in this situation just cut. Put in a bowl with the unsweetened almond milk so the milk covers the quest bar pieces. Microwave for 1-1.5 mins, stirring every 30 seconds until the bar is melted. Let cool in the fridge for 10-15 minutes. Then mix with the plain Greek yogurt and lemon SweetLeaf stevia drops (or 1 stevia packet). This is the filling.Take your base and press approx 1/2 tbsp into the molds of a mini cupcake tray to make 10. Then take your filling and pour it on top of the bases up to the rim of the tray. Freeze 45-60 mins. Remove with a butter knife and eat!Nutritional info for 1: 75 calories; 5 g fat, 6 g carbs (3 g fiber), and 4 g protein
