Lemon Maple Dijon Pork

I don't eat pork often but every now and again I've got a craving for a certain flavor that I just can't ignore. This was one of those moments. Lemon Maple Dijon Pork. Mmmmmmmmmm. I want to try this next with salmon or chicken! The recipe is for one serving but can be easily multiplied for more people.IMG_6127Lemon Maple Dijon PorkServes: 1

  • 4 oz pork loin center cut
  •  juice from 1/3 lemon
  • 2 TBSP sugar free syrup
  • 1/2 TBSP dijon mustard
  • Lemon pepper seasoning
  • Ms. Dash Table Blend seasoning (Optional)

Place your pork in a pan and cover it half way with water. Cook on a medium heat until it starts to brown. Flip, and cook the other side similarly. If the water begins to run out, fill it back up! This keeps it juicy! In the mean time, mix your lemon juice, sugar free syrup, and dijon mustard. Once you can cut into the pork and it's no longer pink, reduce the heat to low. Top the pork with the lemon pepper and Ms. Dash seasonings to taste. And pour on the lemon maple dijon mixture. Let it slightly thicken for 2-3 minutes in the pan, then serve with sides! MEAATTTTT. :DD
