Low Calorie Egg Nog Ice Cream

I love my low calorie ice cream recipe. I just change the flavors whenever I have it! It has a perfect thick texture and the entire serving is only 45 calories! I decided to make egg nog ice cream to match the fall season.IMG_9520[1]Low Calorie Egg Nog Ice CreamServes: 1

  • 1 cup unsweetened almond milk
  • 2 stevia packets
  • 1/2 tsp brandy extract
  • 1/4 tsp rum extract
  • 1/4 tsp nutmeg
  • 1/2 tsp xanthan gum
  • 1/3 cup unsweetened almond milk

Mix the 1 cup of almond milk, steva packet,s, brandy extract, rum extract, and nutmeg. Pour this into ice cube trays and allow it to fully freeze. When you're ready to have ice cream, place the ice cubes in a blender with the xanthan gum and 1/3 cup more almond milk. Blenddddddd. Stay patient with this; the longer you blend it, the thicker it gets. Eventually it hits a point where you just KNOW it's done - the thickness becomes perfect.I made two servings and topped it with chopped up slice of @lucylifts pumpkin bread (recipe on her blog, lucy-works.tumblr.com), pieces of an apple pie quest bar, and a sunflower seed butter cream (1 tbsp sunflower seed butter, 2 tbsp plain Greek yogurt, 1.5 tbsp unsweetened almond milk, and 5-7 stevia drops).
