Maple Bacon-Wrapped Dates

Thisssss made me melt. Turkey bacon-wrapped dates STUFFED with salmon and maple coconut butter (sweet spreads brand). Wutda heyuckk. Savory yet sweet and smooth and warmmm. I realized I wanted this as I drove home from the gym and I walked in the door all overly giddy. I watched them bake in the oven like done? done? DONE?! They almost didn't make it in a picture and I miss them so much. I could devour 30-40 of these easily... Reminded me of a plate I had at a tapas place in Decatur - Iberian Pig. The dish is bacon-wrapped dates stuffed with manchego cheese and walnuts. It is one of the best things I have ever eaten....this version comes close.   • 8 dates
  • 8 slices of turkey bacon
  • 2 tsp maple coconut butter (sweet spreads brand)
  • 2 oz raw salmon

Slice each date along one side so that you can see the center of each date without slicing them in half. Stuff each date with a slice of salmon and 1/4 tsp coconut butter. Then wrap each with a slice of turkey bacon. Secure the turkey bacon by placing a toothpick in each date. Spray a baking tray with nonstick spray and place the dates on top. Bake at 400 F for 20-25 mins until the bacon is crispyyyy . Eat them and let songs from the heavens above sing to yeww.
