Maple Kahlua Batter Stuffed Roll-Ups

Messy finger food is fun. I had oatmeal this flavor the other day and it's ridiculoussssss.IMG_6501[1]Maple Kahlua Batter Stuffed Roll-Ups Makes: 8, Serves: 1Outer Crepe Batter

  • 1 TBSP raw old fashioned rolled oats
  • 4 egg whites
  • 1/2 scoop vanilla whey protein
  • 1 tsp psyllium husks
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1 stevia packet

Maple Kahlua Batter Filling

  • 1/4 cup raw old fashioned rolled oats
  • 2 TBSP coconut flour
  • 3 TBSP sugar free pancake syrup
  • 2 TBSP sugar free kahlua flavored syrup (davinci brand)
  • 1 TBSP water
  • 1 stevia packet

fIRST grind the 1 TBSP oats into a flour. Then add the remaining crepe batter ingredients and blend again. Spray a large pan with nonstick spray. Pour half of your crepe batter into the pan and cook on a medium heat for 3 minutes, flip, and cook another 1-2 minutes. Repeat for the rest of the batter.To make the maple kahlua filling, grind 1/4 cup raw old fashioned rolled oats into a flour. Then use a spoon to mix it with the remaining filling ingredeints. Place half of the mixture in each crepe, roll up, and slice each crepe into 4 pieces.I topped mine with a chocolate protein drizzle (1 TBSP chocolate whey protein and 1 TBSP unsweetened almond milk).
