Mint Chocolate Chip Truffles

I've been loving protein truffles after the gym! Easy source of protein and a nice little treat after a long workout. I've also been loving this whey protein. When I first got it, I didn't think I'd really like it much. I thought it'd be similar to the cookies and cream cellucor (which I'm not a fan of) but with a mint taste. Well I was WRONG. It's so good and now my favorite flavors list has grown to a top 4 ._. whoops. Note: this flavor is in the top 4. For sure. These truffles were delicious; even just greek yogurt + the mint whey is delicious as is. I could eat tubs of it. Tubs O_O Literal. Tubs.Now I want this to happen.   • 3 TBSP coconut flour
  • 1 TBSP almond meal/flour (or more coconut flour)
  • 1 TBSP coconut oil
  • 1 scoop mint chocolate chip whey protein (Cellucor brand)
  • 1 stevia packet
  • 3-4 TBSP unsweetened almond milk
  • 1 cocoa crunch Square Bar

Mix all ingredients (except for the square bar) until thick and even. You add the almond milk last, slowly, using as little as possible to fully incorporate. Place the batter in the fridge for 15 minutes to thicken. Then remove and roll into 7 balls.Crush up 1 cocoa crunch square bar into small bits onto a plate. Then roll your truffle balls in the bits until fully coated. If you place the truffles in the fridge another 15 mins, they thicken perfectly. But I'm impatient and can never bring myself to wait.Then eat!
