Mocha Protein Bites with a Pumpkin "Cream Cheese" Swirl

  • 1/4 cup raw old fashioned rolled oats
  • 1/2 cup almond meal
  • 2 TBSP coconut flour
  • 1/2 scoop chocolate whey protein
  • 1/2 cup plain Greek yogurt
  • 2 TBSP unsweetened almond milk
  • 4 egg whites
  • 4 stevia packets
  • 2 packets of instant coffee
  • 1.5 TBSP unsweetened cocoa powder
  • 1 TBSP vanilla extract
  • 1/2 tsp baking powder

Pumpkin Cream Cheese Swirl

  • 1/2 cup lowfat cottage cheese
  • 2 TBSP pumpkin purée
  • 1 stevia packet
  • 1/2 tsp butter extract
  • 1/4 tsp pumpkin pie spice

Begin by preheating the oven to 375F. Grind the oats into a flour. Then add the rest of the mocha batter ingredients and blend again. Pour the batter into a sprayed muffin pan, forming 10. Make the pumpkin "cream cheese" by mixing the 5 listed ingredients. Place one tablespoon in the center of each batter, in dollops. Bake at 375F for 20-22 minutes, or until a toothpick comes out clean.For one: 77 calories; 3.5 g fat, 5 g carbs (2 g fiber), 7 g protein
