Molten Chocolate Mugcake
WORDS CANNOT DESCRIBE THIS!! I'd be as daring as to say this is THE best recipe I've made in all of my healthy baking life. Just when I thought my deep chocolate mugcake recipe couldn't get any better, IT DID. This is insane and I wept tears of joy. I always thought molten cakes were undercooked cake...which is gross so uh no thx k. But IT'S NOT. Do this and behold the magiccccc of a molten cake. It's so sinlessly indulgent, you'll need to share with someone. I shared with my boyfriend :)Molten Chocolate MugcakeServes: 2
- Batter for my deep chocolate mugcake
- 2 TBSP coconut oil
- 2 TBSP unsweetened cocoa powder
- 2-3 stevia packets
First, you'll need to prepare the inside 3-4 hours or more in advance. Mix the coconut oil, cocoa powder, and stevia. Pour into an ice cube tray, making TWO cubes. Freeze. Once frozen and ready to make the cake, prepare the batter for my deep chocolate mugcake. Spray a bowl with nonstick spray and pour your batter in. Then remove the two cubes from the freezer and place it in the center of the batter. Microwave for 3:00-3:15 minutes. AND OMGOSH ENJOY THE HECK OUT OF IT.Nutritional info for 1 serving (2 servings total): 264 calories; 17 g fat, 23 g carbs (7 g fiber), and 17 g protein
