Orange Butterscotch Waffles
Some fine waffles on a fine Satuday morning. Gotta love the weekends for gracing us with the time to make pancakes and waffles! :DOrange Butterscotch WafflesServes: 1Waffle Base
- 1/3 cup old fashioned rolled oats
- 1/2 scoop vanilla whey protein
- 1 tbsp coconut flour
- 3 egg whites
- 1/2 tsp baking powder
- 1/2 tsp orange extract
- 3/4 tsp butterscotch extract
- 1 stevia packet
Sweet Ginger Cream
- 1/4 cup lowfat cottage cheese
- 1/4 cup plain Greek yogurt
- 1 stevia packet
- 1/2 tsp vanilla extract
- 1/4 tsp ginger
Chocolate Drizzle
- 1 tbsp unsweetened cocoa powder
- 2 stevia packets
- 1.5 tbsp unsweetened almond milk
First, grind your oats into a flour. Then add the rest of the pancake ingredients and blend again until evenly mixed. Spray your waffle maker with a nonstick spray and cook! They can also be made like pancakes if you don't have a waffle maker. Make your ginger cream by using a handblender to mix the cottage cheese, yogurt, stevia, vanilla extract, and ginger. Make the chocolate drizzle by mixing the cocoa powder, stevia, and almond milk. Assemble your lovely stack and enjoy!
