Orange Ginger French Toast

I always take Saturdays as a rest day from the gym and depending on how I feel or how busy my week is, I sometimes take Sunday off as well. Yesterday I took a rest day and slept in late and then made this for brunch. Around 1 pm :p I haven't had egg white french toast in forever so this was maaaagicaaaallll :DDIMG_6508Orange Ginger French ToastServes: 1

  • 4 egg whites
  • 2 tbsp unsweetened almond milk
  • 25 orange stevia drops
  • 1/4 tsp ginger
  • 2-3 pieces of 40 cal/slice bread by Nature's Own

Whisk together the egg whites, almond milk, stevia drops, and ginger. Then soak your bread in the mixture for about 5 minutes per side of the bread. The longer, the better. I only use the Nature's Own 40 cal/slice for french toast instead of Ezekiel bread because Ezekiel bread is so dense. The 40 cal/slice bread is light and really soaks up the egg whites a LOT. It comes out a lot fluffier. Pro tip ;) Anyways. Once soaked, cook the bread on medium heat in a large pan sprayed with nonstick spray. Once you start to see the egg whites cooked on the sides of the bread, flip and cook another 5-6 minutes. Each side should have a light brown crisp to it :DTop with goodies!!I topped mine with with peach protein fluff (3 tbsp plain greek yogurt, 1 scoop vi protein (or 1/2 scoop whey protein), and 1 peach add-in packet), ground cloves, fresh mango, fresh orange slices, hemp seeds, and walnut pieces.
